Condensed Milk (Gerikiru) Cheesecake

Cheesecakes are supposed to be dense and creamy and heavenly. I could just go on. This twisted version was made one day all because I could not get sour cream as typically demanded in cheesecake recipes. This cheesecake holds just the right amount of sweetness and is a family favorite.

Ingredients you will need:

For Biscuit base

  • 2 cups Marie Biscuit crumbs (you can substitute this with Oreo cookies)
  • 1/2 cup butter, melted
  • 2 Tablespoon Sugar (Omit if you are using Oreo cookies for base)

For Cheese cake filling:

  • 2 (400g) bars cream cheese
  • 1 can condensed milk
  • 3 eggs
  • 2 teaspoon Lemon juice
  • 1 Cup Heavy whipped cream

How to make it:

  1. Preheat oven to 150ºC
  2. Combine crumbs, butter and sugar
  3. Press firmly to make bed on a 9-inch spring form pan
  4. Refrigerate for 10 minutes
  5. Bake for 10 minutes then set aside
  6. With a mixer, beat cream cheese with electric beater until light and fluffy
  7. Gradually add in condensed milk while beating until smooth
  8. Add the eggs and lemon juice
  9. Fold in the whipped cream
  10. Mix well making sure to scrape out the bottom
  11. Pour into the spring foam pan
  12. Bake for about 55 minutes until the center of the cake is still slightly jiggly.
  13. Cool completely and then chill for 4 hours to allow the flavors to develop.

For Sauce:

  • 2 pounds of strawberries
  • ½ cup of sugar (more if you have a sweet tooth)
  • 2 tablespoons of cornstarch
  • ¼ of lemon squeezed
  • Pinch of salt

How to make it:

  1. Remove stems from strawberries and cut into small pieces
  2. Place strawberries in a saucepan
  3. Add sugar, cornstarch, lemon and salt and mix
  4. Cook strawberries on medium heat for 10 minutes until it becomes a gooey sauce.
  5. Refrigerate and serve with Cheesecake
