Frittata is quick and easy to make, and is a delicious dish to enjoy with your family! You can leave it plain similar to an omelette, mix it up with various meat, or even make it super cheesy! Today we will take a look at a more healthier frittata which includes yummy veggies!
This recipe is pretty simple and can be done in less than an hour. To make the vegetable frittata you will need the following ingredients:
- 1 tablespoon olive oil
- frozen vegetable mix
- 6 eggs
- 1/2 cup milk
- 1/2 cup grated cheese (optional)
- Pinch of salt
- Pinch of pepper
Preheat the oven to 180 degrees, and rub or spray a square cake pan (preferably 20cm) with some olive oil.
In a large frying pan, heat olive oil in and put in the thawed vegetable mix for about 2-3 minutes or until soft. Pour the softened veggies onto the cake pan and set aside.
In a large bowl, whisk together the eggs and milk until thoroughly combined. Season with a pinch of salt and pepper or your preferred amount and pour over the vegetables.
(optional) sprinkle the cheese over the egg mixture.
Bake it for about 25-30 minutes or until it is set and slightly golden.
Leave it to cool and serve either by itself, or your choice of side.
*Tip: instead of using the frozen vegetable mix, you can add fresh cut up vegetables such as; broccoli, tomato, potatoes, or any to your liking!
